Swedish Inspired Overnight Oats

A few weeks ago I visited a friend of mine that recently immigrated from Germany. We share a love of cooking and baking and she told me about oatmeal made the Swedish way. The moment she explained how easy it was to make, I knew that I had to try it out!

Ingredients:

  • 1 cup raw oats (I love the rolled oats from Woolworths)

  • 1 cup double cream plain yogurt

  • 2 green apples (destalked and grated)

  • 1 tablespoon honey (or to taste)

  • 1 teaspoon cinnamon

  • ½ teaspoon salt

  • Mixed nuts, seeds and raisins (optional)

Method:

  1. Add all the ingredients to a mixing bowl and mix until combined.

  2. Scoop into two separate containers/glasses and place in the fridge overnight.

  3. Top with the mixed nuts, seeds and raisins and enjoy with your morning coffee!

Tip: Fresh fruit, peanut butter, choc chips, coconut shavings or any other yummy topping can be added before serving.

Servings: 2
