Rice paper rolls

Today’s recipe calls for all those who love a good pre-braai snack. Rice paper rolls are easy to prepare, crunchy and also really healthy! You can use almost any vegetable or even fruit to fill these rolls. If you are looking for something with a bit more protein, add cooked beef or chicken strips into the filling.

Ingredients:

  • 12 rice paper wraps

  • ¾ of a large cucumber

  • 2-3 carrots

  • 2 avocados

  • 80-100ml soy sauce

Method:

  1. Prepare the cucumber, carrots and avocados by cutting it into thin slices.

  2. Important: Make one wrap at a time. Soak the rice paper wrap in cold water for 30 seconds.

  3. Remove the wrap from the water and place it on a dry kitchen towel to remove the excess water.

  4. Place the thinly sliced cucumber, carrot and avocado in the middle of the wrap and roll the wrap tightly.

  5. Repeat this process until all the wraps have been made.

  6. Garnish your wraps with seeds and serve with soy sauce.

When enjoyed as a snack, this recipe serves 6 people.
