High-Protein Birthday Cake Cupcakes


It's my birthday and I am literally just eating cake today! I thought I would perfect the ultimate high-protein birthday cake cupcake and I have sure gone out of my way! It's amazing! Low in calories and normal at-home ingredients are used! SO EASY!


These took me 15 minutes to make in total! Baked and topped with sprinkles and everything.

I bought these silicone cupcake cups from Mrp Home the other day and they work great, they are also a great size, perfect for a snack size!


MAKES 4 SERVINGS

Ingredients:

Wet:

sweetener drops (20)

1 egg white large

60ml milk of choice

2ml vanilla extract/essence

Dry:

1/2 cup cake wheat flour

sweetener drops (20)

1 tsp baking powder

1 scoop vanilla protein whey - Metalab (Use "lara15" for 15% discount at checkout!)

Icing:

60g fat-free cottage cheese

1/2 scoop vanilla protein whey

Instructions:

1. Add the dry ingredients to the wet ingredients.

2. Mix it well.

3. Throw in sprinkles in the batter.

4. Transfer the batter to cupcake holders. (I used silicone ones.)

5. Bake for 10 minutes at 180 degrees celsius in the air fryer OR 10-15minutes in the oven at 180 degrees celsius.

6. Let it cool down and top them with the icing mixture and extra birthday cake sprinkles!
