Cinnamon rolls with yogurt frosting

My husband and I visited Johannesburg over the weekend and as we walked into the shopping mall’s food court, the smell of cinnamon rolls made our mouths water. This made me think of this delicious cinnamon roll recipe (made with a little shortcut - store bought dough!)

Ingredients:

For the rolls:

  • 1 bag of store bought dough (+- 500g)

  • ¼ cup butter (at room temperature)

  • ⅓ cup brown sugar

  • 1 tablespoon cinnamon

For the frosting:

  • ⅔ cup icing sugar

  • ⅓ cup double cream plain yogurt

  • 1 tablespoon milk (if needed)

Method:

  1. Sprinkle a work surface with flour and role out your dough with a rolling pin.

  2. Mix the sugar, butter and cinnamon in a small mixing bowl and spread the mixture onto your rolled out dough.

  3. Using your hands, roll the dough into a cylinder and cut into 12 round pieces.

  4. Place the rolls in a greased ovenproof dish, cover with a kitchen towel and let it rise for about 20 minutes.

  5. Preheat the oven to 180°C.

  6. Bake the rolls for 30-35 minutes until it is golden brown.

  7. While the rolls are baking you can make your yogurt frosting. Combine the icing sugar and double cream yogurt, if the mixture is dry, add a little bit of milk.

  8. Once the rolls are done baking, let it cool off for a few minutes before covering it with the yogurt frosting.

This recipe makes 12 cinnamon rolls.
