Butternut and Onion Tart






Whether it is for a tea time treat, a side dish for a braai or a brunch dish, this butternut and onion tart ticks all the boxes. With a few simple ingredients, you can have a crowd pleaser in no time.











Ingredients:


  • 1-2 onions 

  • 500g butternut 

  • 150g feta, crumbled 

  • 4 eggs 

  • 250g smooth cottage cheese 

  • 250ml milk 

  • 1 tbsp olive oil 

  • Salt and pepper to taste

  • 1 roll puff pastry 



Method:

  1. Cube the butternut and slice the onions into circles. 

  2. Place the butternut and onions into an ovenproof dish, cover with olive oil, season with salt and pepper and bake for 20-25 minutes at 180°C.  

  3. While the vegetables are baking, mix the eggs, milk and cottage cheese in a bowl. (Use a stand mixer or whisk to thoroughly mix in the cottage cheese.)

  4. Place the puff pastry into a 30x25x5 cm dish. Make sure the pastry is ‘tucked into’ all the corners and cut off redundant pastry. 

  5. Add the butternut, onions and crumbled feta on top of the puff pastry and cover with the egg mixture. Season with salt and pepper.

  6. Bake in the oven for 35-40 minutes until the puff pastry is golden brown. 

  7. Serve hot or cold. 


Note: 

The cottage cheese can be substituted with cream.
