One of my all time favourite ingredients to have in my fridge is full cream plain yogurt. It is such a versatile ingredient and it is packed with so many nutrients. This apple and cucumber salad can be enjoyed as a snack or as a side dish to almost any protein.
Ingredients:
- 2-3 Granny Smith apples
- 1/2 large cucumber
- 100g peanuts
- 140g cranberries
- 300g double cream plain yogurt
Method:
Slice the apples and cucumber into thin slices and cut into quarters.
Mix together the apples, cucumbers, peanuts and cranberries.
Add in the yogurt, mix and enjoy!
Try this: Replace the peanuts with almonds, walnuts or pecan nuts.
