10-minute Couscous Salad


Couscous that one pantry staple that always comes in handy, whether it is for a quick dinner or as a side dish. Couscous is high in fibre and ready in just 10 minutes. You can add almost any vegetable or protein to make this a healthy, speedy and filling dish.


This 10-minute couscous salad is perfect as a side dish for a braai or any type of protein dish!


You will need:


- 1 cup wholewheat couscous

- 1 cup boiled water

- half a cucumber

- 50g feta cheese

- 1/2 a large avocado or 1 medium avocado

- two to three green figs in syrup (green fig preserve)

- salt and peper to taste

- 2 tabelspoons pesto (optional)



Method:

  1. Add couscous into a large bowl, season it with salt and peper and pour over the boiled water. Cover the couscous with a kitchen towel and leave for 10-minutes until all the water has been absorbed.

  2. Meanwhile, dice the cucumber, feta cheese, avocado and green figs.

  3. When the couscous is ready, fork through the diced cucumber, feta cheese, avocado, green figs and pesto.
